The Kentish gypsy tart

Gypsy tarts are a Kentish specialty – a very sweet evaporated milk and sugar filling, baked in a pastry case.  Legend has it that the tart originated in Sheppey, where an elderly lady saw some rather malnourished traveller children playing, and determined to bake them a tasty treat. She had limited ingredients in her larder, and so the gypsy tart was born.
